The first of the 2020 podcasts is live with Tom Comerford, executive chef at Kilkenny Ormonde Hotel.
This one, I very much enjoyed.
It was recorded in two parts, pre and post Christmas (largely due to this), the second resulting in a great morning spent in the kitchen for a full walk through an organic chicken dish.
A native of Kilkenny, Tom’s worked with Pierre Koffmann at La Tante Claire, Jean-Christophe Novelli and a host of others, bringing Michelin-starred experience back to Kilkenny in recent years.
He’s been at the Kilkenny Ormonde Hotel for over a year and is very much bringing a passion for simple, local food and ingredients to the plate.
We’ll talk about the restaurant, menus, tailoring the hotel to guests and locals, calories on menus, training for chefs and lots of cooking
